Vegetable Pilaf
Inspired from a Japanese cookery show that I watched. This one is fairly simple and attractive.
4 servings
- 1 cup basmati rice, washed till the water is evident
- 2 cup vegetable broth
- 2 medium-sized zucchini, cubed
- 1 massive tomato, cubed
- 1 bell pepper, cubed
- 1 medium-sized eggplant, cubed
- 1/2 onion, cubed
- 3 garlic, crushed and minced
- 1 pinch salt
- 2 tbsp oil (I usually use sunflower)
Steps
- Heat oil in a very pan. Add the vegetables + onion and stir for regarding three minutes. Add garlic, stir for a second close to.
- Add basmati rice. Add salt. Stir well.
- Pour broth bit by bit. once it's boiling, scale back the warmth and canopy.
- After twenty minutes, check the consistency. If the rice is grilled and downlike, then it's done. If it's a small amount dry, add a small amount of water and canopy for five minutes close to.
