Ingredients
For the dressing:
- 3/4 cup uncooked cashews, soaked
- 1/4 cup water
- 2 tbsp natural maple syrup
- 2 tbsp apple cider vinegar
- half of tsp mined garlic
- heaping half of tsp sea salt
- Freshly ground black pepper
For the salad:
- 2 huge broccoli crowns (florets handiest), finely chopped
- 1 half cups purple grapes, halved
- 1/three cup roasted salted almonds, finely chopped
- 3/4 cup diced red onion
- 1/three cup dried cranberries or raisins
Steps
- Place cashews in a bowl. Cover with water and soak for 2 hours or in a single day. If you've got a Nutribullet or excessive pace blender, sincerely soak them in warm water for 10 mins.
- Drain cashews. Add to blender with with rest of the dressing elements. Blend until completely smooth and creamy.
- Place broccoli, grapes, almonds, purple onion, and dried cranberries in a medium or large mixing bowl. Add dressing and toss throughly to coat. Season with salt and pepper to flavor. Serve chilled.
