Mini Pancake Muffins

Making muffin pancakes at my home is a favorite way for us to enjoy breakfast or lunch! It started as a fun idea that I had with my children, and then grew into something we like to do together. I like to find new ways to add to the fun in our daily morning rituals, and I can easily see this becoming a sweet Sunday morning tradition.



The first time I made this mini pancake muffin was because I wanted to try to make something that was fun for everyone but still didn't make a lot of extra work for myself.

One of the best things about why I like making this mini pancake muffin with my children is that it is a delicious breakfast or snack that can appeal to the tastes of everyone who is sometimes picky.

Pancakes were a big hit at our house and one of my children's favorite breakfast foods.

Here is a creative way to turn it into an adjustable portion, the size of a bite with each child's favorite toppings. These mini muffin bite bites are very easy to prepare and fun for little kids in the kitchen!

I love watching them decorate their own mini pancake muffins with a variety of different toppings. It really brings out their creativity and individuality. This helps bring up discussions about the favorite colors and flavors they like the most. They also have fun creating interesting pairs (strawberries and chocolate chips are one of my favorites).

Then, when I take out the mini pancake muffin from the oven, they can see the end result of their work come alive!

Children swallow a bite of this mini pancake. It tastes like a muffin, except it's a lot sweeter. It's also great for snacking while traveling, a quick summer picnic and packing for lunch too.

INGREDIENTS

  • Your favorite pancake dough becomes easier to make
  • Topping, e.g. cut fruit, nuts, sprinkles, chocolate chips, etc.
  • Mini muffin pan
  • Non-stick spray


INSTRUCTIONS

  1. Preheat the oven to 350 degrees. Spray a mini muffin pan with nonstick spray and set aside.
  2. Prepare your pancake mixture and fill each muffin can a little more than half full. Here's the fun part. Involve children in adding their favorite toppings. Use whatever you have in the kitchen or fridge. We use strawberries, blueberries, sprinkles, chocolate, and bananas.
  3. Bake in an oven at 350 degrees until the peak returns, about 15-20 minutes.
