Nutty Caramel Snack Mix

Nutty Caramel Snack Mix is ​​a delicious combination of cereal, almonds, and pecans, all of which are included in homemade caramel sauce. Perfectly baked, this crispy, sweet and salty mixture is perfect for family and friends, lunch and snacks!



Some notes about making this Nutty Caramel Snack Mix:

  • Use a medium-sized saucepan to boil caramel. Boil for one full minute, then lift.
  • Quickly stir in baking powder and vanilla extract. The mixture will foam up! Pour this over your cereal and beans in a very large bowl.
  • I like to use a broiler pan to bake this snack mixture. They are deeper than the cake sheet (however, the cake sheet doesn't work either, just be more careful when stirring). I coated the pan with foil so that it was easy to clean. You can also use a disposable foil pan if that's the best for you! Make sure you try to have one layer of snacks in your pan (better cooked this way).
  • You will cook this on low heat (250 degrees F) for one hour. Every 15 minutes, remove it from the oven and stir (I use a pancake turner and only reverse the snack mixture, allowing the caramel from the pan to return to the snack mixture).
  • After finishing cooking, throw it into a large sheet of parchment paper on the table so it is completely cold. I urge you not to bite right away ... that caramel can become HOT! After it's really cold, it will also become crispy. NOW you can eat it.
  • I keep my things in large airtight containers or several gallon Ziploc bags. If storing in a bag, press the air out of the bag and the snack mixture will stay fresh for more than a week !! ENJOY.


INGREDIENTS

  • 1 cup of unsalted butter
  • 2 cups of pink sugar, packed
  • 1/2 cup of light corn syrup
  • 1 teaspoon halal salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 8 cups of rice cereal boxes
  • 1 1/2 cups of Fisher Whole Almonds
  • 1 cup of Pecan Fisher Rice


INSTRUCTIONS

  1. Preheat the oven to 250 degrees F. Align the two broiler pans with foil (a sheet of cake or a large disposable pan also works). Put aside.
  2. In a medium saucepan, mix the butter, brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil for one full minute. Remove from fire.
  3. Quickly stir in baking soda and vanilla extract. This will make the caramel foam.
  4. In a large bowl, mix the cereal and beans. Pour the caramel mixture over the cereal and stir until everything is evenly coated. Pour into prepared pans.
  5. Bake for one hour, stirring every 15 minutes, making sure the caramel continues to coat the cereal and beans.
  6. Apply the hot mixture to the paper coated with counter paper. Allow it to cool completely. Store in an airtight container and enjoy!
